Listeria Defense is a comprehensive service for the detection, elimination and prevention of Listeria contamination, aimed at minimising the possibility of food contamination by Listeria monocytogenes in food and beverage processing plants. It is aimed both at industries that have detected contamination by this pathogen and those that want to improve their prevention mechanisms.

This service identifies the causes of food contamination by Listeria monocytogenes and implements preventive measures to minimise future risks. After implementing the appropriate corrective and/or preventive measures, if necessary, a shock plan is implemented and, in all cases, a prevention plan is designed to prevent the possibility of contamination of the food product.

Listeria monocytogenes contamination is a challenge for food industries that can cause losses of up to 10 million euros for a product recall. The foods most affected by Listeria monocytogenes contamination are those that are marketed ready-to-eat, without further thermal processing, such as sausages, salmon, sausages and cheeses. To minimise the possibility of contamination by Listeria, the Listeria Defense service provides industries with the knowledge and tools necessary to prevent it.

Listeria Defense is approached in four phases: diagnosis, control, verification and prevention.

In the initial diagnostic phase, the origin and location of the contamination is identified, as well as the points most prone to possible contamination by Listeria monocytogenes.

In the second control phase, corrective measures are implemented to prevent the risk of contamination and to treat, if necessary, contamination by this pathogen.

In the verification phase, the results obtained are reviewed and the results of the control measures are confirmed, to finally move on to the prevention phase in which a plan is created and the appropriate procedures and strategies are implemented to prevent future contamination by Listeria.

CHRISTEYNS Spain has a long experience in the control of listeria and contamination control, as a result of which we have published the book “Listeria monocytogenes in meat industries” and the direction of the international project BIOLISME II in which we have developed an equipment that allows the detection of Listeria monocytogenes in less than 2 hours.

Although listeriosis is uncommon, the disease is often severe, with high hospitalisation and mortality rates.
